There was an article in the New York times recently raving about Kale. Fashionable. Popular. Trendy. Obsessed. Is Kale a new Emo band or a re-vamped speakeasy in Brooklyn? Nope. Just a vegetable.
I can understand what all the fuss is about and why kale is everybody’s new BFF. Because it’s that good.
Kale trumps spinach every time in my book.
It doesn’t even seem possible that this handful of leaves growing in my garden could satiate me like a steak, but tonite they did. Compared to yesterday’s spinach which I ate begrudgingly, Kale is superb.
Sauteed in coconut oil with a pinch of Himalayan salt is the way to go. Trust.
